Travel cakes are essentially sponge cakes with minimal frosting that, as their name suggests, travel well, are ideal for tea time and have a longer shelf life.
You will not just learn recipes in the process, but each cake uses different techniques of pairing and presentation which will help you create various other combinations on your own.

Dark Chocolate and Orange Cake
A dense and delicious dark chocolate cake infused with orange, orange bitters with a dark chocolate ganache running through the centre.
This recipe covers techniques of making a dark chocolate sponge, making orange bitters, piping a ganache inside a travel cake, cake decor.
Blueberry Citrus Loaf with Lemon Syrup
A classic vanilla sponge with blueberries, citrus and covered in a lemon syrup for shine and citrus punch. This one spells summer like none other.
This recipe covers techniques of a classic vanilla sponge, working with fresh vs frozen berries, making your own syrup and pairings for summer cakes.
Coffee Cake with Walnut Crumble
Coffee cake made using millets topped with a walnut crumble. This recipe covers techniques of a coffee cake and a vegan crumble that can be used in pies, tarts and cakes alike.
Marble Cake
A classic and a childhood favourite this marble cake has intense chocolate flavour and a moist vanilla sponge.
