Vanilla sponge is one of the most difficult recipes to crack when it comes to vegan, gluten free and refined sugar free baking. It needs to be light, hold up shape and be extremely neutral tasting so it can compliment the flavours we add to it. Vegan baking uses denser flours which makes it difficult to achieve the desired texture.
However, this workshop by chef Priyasha, founder, The Cinnamon Kitchen is a complete game changer!
Learn to make her revolutionary vanilla sponge, which is sturdy, delicious and will become your go to recipe for any non chocolate sponge based cake.
You will be making chef’s delicious MANGO CITRUS CAKE and in the process, the following recipes will be covered:
Vanilla sponge
Chef will be teaching her revolutionary vanilla sponge recipe made with everyday ingredients that is moist, sturdy and versatile. She will be scenting it with orange for the purpose of the mango citrus cake
Buttercreams
Chef will be teaching you any and all buttercreams. Mango buttercream, chocolate buttercream (that chef uses famously in her amaranth and almond flour cake) and coffee buttercream (that chef uses in her loved chocolate coffee tart) will be demonstrated. You will be able to make any and all pipe-able buttercreams using this recipe.
Jam
Chef will be demonstrating mango citrus jam for the purpose of this workshop and be talking about preparing any and all jams.
Sugar free and diabetic friendly variation of all elements
Sugar free and diabetic friendly cakes are highly in demand these days. Chef will be talking about how to make all these components sugar free and diabetic friendly, discussing the type and quantity of alternative sweetener to be used
Cake assembly
Chef will demonstrate how to assemble a layer cake, talk about temperatures, pre prep, and share tips on how to make layer cake travel safe.
